2 Meatless Monday Soup Ideas

Today’s Meatless Monday is brought to you by 4 Step Lentil Soup and 10 Bean Chipotle Soup

10 Bean Chipotle Soup is made from a premixed bag of: black-eyed peas, black turtle beans, butter beans, haricot beans, lima beans, red kidney beans, rose cocoa beans, alubia beans,  and mung beans.

The prep was pretty straight forward:

  1. Boiled three cups of water with salt, garlic, and a teaspoon of olive oil.
  2. After the water was brought to a boil, I added approximately 3/4 cup of beans from the prepackaged mix.
  3. I turned the eye down to support a simmer.
  4. Simmered the beans until the mix was tender.
  5. Drained
  6. Add half the cooked beans to the blender with half of the chipotle packet.
  7. Blended to medium thickness (not puree)
  8. Combined the remainder of the blended beans with the whole beans and chipotle packet
  9. Simmered for 10 minutes
  10. Cool, serve, and/or store for a later lunch.
The Grill Mates Chipotle Pepper Packet add a great punch to the mix. For a less spicy kick, only use half the packet.
Creamy Lentil Soup
1. Cook in crockpot with a hint of salt and turmeric
2. Blend with pepper and a half of teaspoon of turmeric
3. Simmer on stove top
4. Serve or store
I’m finding that soup options are served quite well for lunch. My lunch times are typically limited so I need something that I can heat and eat. Bean soups are very filling, not as carb filled as rice or noodles, and provide a great source of protein.
